1 Tonee handpicked, 25% with 7 days carbonic maceration, 75% straight press. Wild fermented in barrel for 6 months. Further fermented for 3 months in the same barrel using 24-month-old Flor yeast from a La Sirene Wild Ale Barrel.

Hand-bottled into Champenoise bottles and conditioned with Champagne yeast.
